Las Vegas is never short of new food and drink, but lately the buzz around new and upcoming bars and restaurants has been particularly lively.
Think: a bar full of oddities housing a hidden speakeasy. Vegas’ first restaurant from a legendary name in hospitality. A $10 million steakhouse. A strip from the South (“Plage”; “from France”) arrives on the Strip. Japanese cocktails served in a hidden pop-up (hint: look for the maneki-neko). A second location for a breakfast and brunch cafe. And more Korean BBQ in Chinatown.

The cabinet of curiosities and the lock
Curious about this lounge and the speakeasy inside? Wonder no more – they just opened on the lower level of Bally. Both are courtesy of Imagine Exhibitions, creator and operator of immersive experiences.
The Salon du Cabinet presents curiosities – artifacts, relics, keepsakes, keepsakes, tchotchkes, trinkets – that suggest journeys of discovery, in the world or in the mind. And guests are invited to imagine the journeys behind the objects for themselves while exploring cocktails like The Curious Cosmopolitan or a Bedazzled Skullcap Mojito.

To access speakeasy The Lock, its entrance disguised as a vault, guests must solve one of two hidden puzzles. Inside, patrons can imbibe Prohibition-era craft cocktails or ask the mixologist to create a custom drink.
Martha Stewart’s Bedford
In Paris Las Vegas
Martha Stewart, legendary dean of DIY, hospitality and lifestyle, has been known for about four decades. In August, she opened her very first restaurant in Vegas, The Bedford by Martha Stewart, in Paris Las Vegas. (Martha Stewart Café, a coffee shop and teahouse in New York City, closed in 2019 and was not a full-service establishment.)
The Bedford, according to the promotional material, evokes (in tasteful neutral tones) the feel of Stewart’s country home in Tony Bedford, New York, giving guests “an authentic glimpse into how she lives and plays. in his own house”.
Stewart designed the 194-seat restaurant, which will serve “the same types of food I serve my friends and family.” Ingredients will come from vendors such as Las Vegas Farmers Market, D’Artagnan, Roe Caviar, Frog Hollow Farmstead and Vermont Creamery.

Steakhouse Toca Madera
Between Aria and the shops of Crystals
Even in Las Vegas, $10 million is a lot to spend on a restaurant. What does that kind of room create at Toca Madera Las Vegas, a modern Mexican steakhouse opening August 9? For one thing, judging by the photographs, he’s buying a bevy of custom woodwork that ranges in appearance from newly wooded to winding biomorphic to polyhedral clad columns.
Toca Madera’s third location (the first two are in Los Angeles and Scottsdale, Arizona) also features a nest-like structure (like in a bird) with a pond and trees forming the entrance, music sets house designed by resident DJs, live musical performances and a new menu (launching soon in all three Tocas) with highlights like wagyu A5 tacos.
In fact, premium Japanese and Australian beef forms the heart of Toca Madera’s menu, as expressed in dishes like fiery, afloat tomahawk and bone marrow steak on salsa verde. The steakhouse covers approximately 10,000 square feet and can accommodate over 200 people.
In The Venetian
The Strip is not lacking in sexiness. And it gets louder and louder. Villa Azur – founded in Miami Beach, with several other outposts including St. Tropez – is set to launch in Q4 2022 at the Grand Canal Shoppes at The Venetian. Beyond the garland-draped entrance, a stretch of sleek beach white is punctuated with brightly colored pop culture imagery.
The menu taps into southern French cuisine (with nods to Italy) in dishes like grilled octopus, jeweled truffle ravioli and pasta a la meule (pasta cooked in a hollowed-out wheel of Parmigiano -Reggiano flambéed with Cognac). Many dishes are prepared at the table, and there are signature cocktails and a champagne menu.
DJs, dancers, musicians and other entertainment extend the energy and theatricality of the Villa Azur in the evening. Should we get up and dance? Yeah !
Tokyo Vice Den
In the world of seaside resorts
There’s a new vice in Vegas. Until October 1, Tokyo Vice Den makes its appearance at the speakeasy Here Kitty Kitty, in the Famous Foods Street Eats room of Resorts World. The pop-up, a partnership with Japanese spirits House of Suntory, offers guests the opportunity to sip specialty cocktails while surrounded by Japanese-inspired decor.
A few cocktails: a Hambei and the Prunier (Toki Whisky, plum juice, sparkling water, a pinch of sumac and MSG); a Momotaro (Haku Vodka, maraschino liqueur, peach soju, white peach syrup, gold flakes); and a Shinto (Legent Bourbon, allspice, and a palo santo herbal syrup from South America).
To find the speakeasy, head to the Fuhu Cha Chaan Teng restaurant in the Street Eats lobby. Check in at the reception desk; the speakeasy sits behind a bookshelf full of lucky cats in the restaurant. Cocktails are $21.
Broken Yellow Coffee
Broken Yolk Cafee is set to open its second Southern Nevada location in October in Henderson, on the St. Rose and Southern Maryland Parkways; Nevada’s first store opened in 2019 in Town Square. The new Broken Yolk is part of a chain of over 34 stores nationwide.
The breakfast and brunch menu features items such as Tiki Toast (thick slices of sweet Hawaiian bread topped with berries and coconut), Golden State Benedict (with tomato, avocado, applewood-smoked bacon), and a Fiesta Burrito (eggs, shredded beef, cheddar, avocado, salsa fresca). Drinks include beer, Bloody Mary flights, and specialty cocktails.
In Shanghai Square
Mr. BBQ, of Fullerton, Calif., plans to expand to Shanghai Plaza in Chinatown in August. The all-you-can-eat Korean BBQ has over 30 proteins, including octopus, scallops, salmon, marinated chicken, pork belly, brisket, top sirloin, and rib eye. The owners also plan to open a boba and donut shop in the center.
